Su Li (Sweet Sorghum Pearls)

A brand new and exceptionally rare tea from the Wuyi Shan Tea Research Institute, Su Li is an oolong on the green side. Rolled into pearls in the contemporary Taiwanese oolong style, it's grown in the best soil on the cliffs of Wuyi Mountain, Fujian Province. Since it is a new tea, quantity is very limited. What sets this tea apart is its malty, fragrant flavor and an amazingly (natural) sugary aftertaste. Su Li can be stored for 1 year in a dry, air- and light-tight container.

Brewing tips: green oolongs should be brewed in a gaiwan, and with cool water to prevent over-heating which causes bitterness. Preheat gaiwan and cups with hot water. (we recommend 165-175°F). Place 2 teaspoons of tea into the gaiwan and gently add the water so the tea is evenly saturated. Using the lid to prevent the tea from escaping, immediately pour out this wash. Add more water and infuse for 1-2 minutes with the lid off, depending on taste. Pour tea into preheated cups and serve. Infusion can be repeated four or more times, increasing the infusion time as necessary. Su Li can also be made into a refreshing cool drink by dropping 5-6 pearls into a glass of cold water and letting it infuse for 30- 40 minutes.
